I bought Medjool dates on a whim from the grocery store the other day and they have been sitting in my pantry giving me the side eye ever since. I have been experimenting with some new toppings/combinations for my overnight oats and they took a spot as a top contender: high in dietary fiber, and rich in potassium and copper, to name a few of the key nutrients. However, last night after dinner I had a bad case of the Hungry Horrors (yeah, I never heard that expression until I moved to New England – basically, when you feel it necessary to eat everything in sight) and I was craving chocolate somethin’ fierce. One of my favorite ways to incorporate my nutritional “wants” and “needs” is in a smoothie: you can throw just about anything in there and it (usually) comes out delicious. This particular one combines my favorites: coconut and chocolate with banana and date (It’s also a great way to start chipping away at my immense stockpile of frozen bananas that are dominating my freezer). It’s simple, sweet, filling and definitely better for you than eating an entire pint of Ben & Jerry’s (or even So Delicious Chocolate Peanut Butter Swirl coconut milk ice cream, for that matter).
Chocolate, Coconut & Date Smoothie
- 2 frozen bananas
- 2 dates, pitted (…or more depending on desired sweetness. K, fine, I’ll admit it – I put in 4 😉 )
- 1 Tbsp extra dark cocoa powder (I used Hershey’s Special Dark Chocolate cocoa)
- 2 -3 Tbsp coconut flakes
- 1 scoop chocolate protein powder*
- ½ cup unsweetened vanilla almond milk**
*If you’re not feeling the extra prots, you can substitute 1 Tbsp raw cacao or cocoa powder to amp up the chocolatey-ness.
**This would be phenomenal with unsweetened vanilla coconut milk, but I didn’t have any. If you really want to go for it, substitute full-fat coconut milk to turn this baby into a balls-out amazing milkshake.
Blend until smooth, garnish with cocoa powder, coconut sugar and coconut flakes. Tip: Make sure that your dates are ACTUALLY pitted, don’t pull an “L” and throw the whole date in there, blend, and take a few seconds before you realize why it sounds like you are blending gravel. Whoooops! 😛
It’s amazingly chocolate-y and sweet-tooth satisfying, and even though it’s breakfast-approved, it definitely tastes like a dessert. It definitely hit the spot last night and quieted my Hungry Horrors/the chocolate-craving-she-monster inside me. I bet you could even freeze a batch of this and eat it like ice cream straight out of your freezer. Mmmm! I may have to make another one of these tonight….
